Innovation grant turns rock lobster waste in to premium product


SEAFOOD processor Ferguson Australia has received a $20,000 grant to turn its waste products in to high quality food exports.

The South Australian company currently discards large parts of the rock lobsters it processes, including the head, shell and organs.

Ferguson Australia Managing Director Andrew Ferguson said that the grant would allow them to reduce their waste costs, improve sustainability and turn a profit on the premium products they plan to create.

“We will work with Flinders University to produce three new prototypes for export: a homogenised lobster oil product, a flavoured stock based on lobster protein powder, and extracts that could be used for pharmaceutical products,” he said.

The grant was awarded as part of the South Australian Government’s Innovation Voucher Program.
